Our delightful and healthy version of the traditional chile relleno. Ours are green chilies stuffed with creamy slices of avocado and topped with melted mozzarella cheese. Served with sides of cilantro lime rice and chipotle black beans.
Sautéed zucchini and carrots with your choice of chipotle black beans or whole black beans, pico de gallo, and cilantro lime rice. Then choose your sauce: fire-roasted tomato, fire-roasted tomatillo and avocado, or creamy Ixcatic. Option to add sliced avocados, X'catic salsa, cheese, or grilled pineapple.
Two traditional Mayan favorites made with a thick, handmade corn tortilla lightly pan-fried and topped with your choice of meat: carne asada (beef), pollo asado (chicken), puerco asado (grilled pork), or al pastor (pork marinated in achiote sauce). This dish can be made dairy-free or vegetarian if requested.
Lightly sautéed spinach, onions, and tomatoes wrapped in yellow corn tortillas. Topped with melted cheese and your choice of red, green, or creamy ixcatlic salsas.
